Ingredients
- 2 pounds heirloom tomatoes variety of shapes and colors
- 2 cups arugula chopped
- 1 vidalia or sweet onion, small, thinly sliced
- 1 tablespoon fresh basil chopped
- 1 tablespoon fresh mint chopped
- 1 tablespoon fresh oregano chopped
- 1 tablespoon fresh thyme chopped
- sea salt and black pepper to taste
- 2 tablespoons extra virgin olive oil
- 2 tablespoons white balsamic vinegar
- 2 tablespoons feta cheese crumbles
