  • 1 pound lean ground turkey, 93% lean
  • 1 (15 ounce) can black beans, drained
  • 2 cups salsa, no sugar added
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon kosher or sea salt
  • 2 cups cooked long grain brown rice, cooked according to package
  • 1/2 cup shredded low-fat cheddar cheese


  1. In a large nonstick skillet, cook ground turkey until cooked through, breaking up the meat as it cooks. Drain off any excess fat.
  2. Add beans, salsa, spices, and cooked rice. Allow to simmer until mixture is hot and thickens slightly. Add cheese and allow to melt. Serve.
