This Incredibly Simple and Delicious Fajita Chicken Bake Requires Just a Few Staple Ingredients
Ingredients
- 5 boneless and skinless chicken breasts
- 2 teaspoons Skinny Ms. Taco Seasoning
- 1/2 teaspoon Kosher salt
- 1/2 teaspoon ground black pepper
- 3 whole bell peppers sliced into strips
- 1 small red onion thinly sliced
- 1.5 tablespoons olive oil
- 1/2 cup fat-free shredded cheddar cheese
Instructions
- Preheat oven to 375 degrees. Slice peppers and onion into thinly sliced strips and toss them with the olive oil. Set aside.
- Place the chicken breasts down in a single layer on a glass baking dish, and sprinkle taco seasoning on top of each breast, followed by salt and pepper to taste.
- Sprinkle the sliced onion and peppers over the chicken breasts in an even layer. Add another drizzle of olive oil (optional).
- Add the cheddar cheese on top of chicken and veggies as a final layer, and bake for 45 to 60 minutes, or until chicken is fully cooked and reaches an internal temperature of 165.
