Cheesy and delicious, while packing a protein punch!

Nothing compares to that intoxicating smell of sizzling fajitas. Tender-crisp peppers pair up with juicy meat and warm tortillas to bring you that mouthwatering meal worth dreaming about. Unfortunately, the deliciousness of traditional fajitas usually comes with a calorie-heavy price tag. Most restaurants use an overly-generous amount of oil and salt, making the dish an unfriendly option for your waistline. Well, consider it your lucky day because we’ve “skinnifed” this classic, Mexican-inspired meal, with our downright delicious Fajita Chicken Bake!

A Fajita Chicken Bake that is Flavorful

This Incredibly Simple and Delicious Fajita Chicken Bake Requires Just a Few Staple Ingredients

This dish calls for clean-eating ingredients and just a few simple steps. This colorful, south-of-the-border meal is a breeze to make, and bursting with flavor!

Chicken, bell peppers, and onions make up the meat of this clean-eating recipe. Reduced fat cheddar gives this dish a melted cheesy finish that your taste buds will go crazy for. Instead of firing up a frying pan, preheat the oven to 375 degrees Fahrenheit, as your oven will do the majority of the cooking here. Frying requires a great deal of oils and fats to cook food. That said, baking serves as a friendlier cooking method. It’ll slash a boatload of calories that creep up on you when frying.

…and so Easy

This dish is a cinch to make. After preheating, chop your bell peppers and purple onion into thin slices. We recommend using different colored peppers. This assortment of colors and flavors will crank up the dish’s flavor and vibrancy. Our recipe calls for 2-3 peppers, but feel free to use as many as you’d like. After all, when it comes to roasted veggies, the more you have the more filling your dish will be!

Once you’ve finished this prep, lay chicken breasts down in a single layer and sprinkle taco seasoning over each breast. If you have the ingredients, give our awesome Skinny Ms. Taco Seasoning a shot! This recipe ditches the preservatives, sodium, and coloring store-bought brands have, without sparing delicious flavor.

We recommend using a glass baking dish. Place onions and peppers in a single layer on top of the chicken, followed by a generous drizzle of olive oil, and salt and pepper to taste. For your final step, sprinkle on the cheese. Bake for 35-45 minutes,or until chicken is fully cooked through.

Why You Should Feel Good About It

The tender, juicy chicken packs a serious protein punch to keep you full and satisfied for hours afterwards. For this waistline-friendly dish, we’ve opted for fat-free cheddar. You’ll still get that ooey gooey cheese at the end, without the scary caloric price tag.

Chock-full of  nutrients, the bell peppers certainly give you something to feel good about. These key players are loaded with vitamin C, almost double your daily needs in half a cup! Not to mention, bell peppers offer a great deal of carotenoids, or cancer-fighting properties.

This scrumptious recipe is a breeze to throw together and requires minimum prep. It seriously makes the perfect weeknight meal! With just a few simple ingredients, you’ll have this chicken bake on the table in no time.

  1. Amazing recipe. Top with diced avocado mixed with lime juice and garlic pepper seasoning and it puts it over the top. I served with cauliflower rice pilaf and corn.
