Your new favorite chicken salad recipe (made healthy!)
Refreshing apple, sweet grape, and savory chicken – all at the same time! And did I mention minced chives, the signature mustard taste and pecans for texture? This Skinny Mustard Chicken Salad is full of color, flavor, and is a delicious powerhouse of a lunch or dinner. This is a chopped-type, crunchy, salad… the kind that takes half an hour to eat while you enjoy every little bite.
The Skinny Mustard Chicken Salad
On a nutritional level, this Skinny Mustard Chicken Salad uses nutrient-dense ingredients which are both affordable and available all year round. This recipe is not only an easy one to scale up to feed a crowd, it’s also hearty enough to be a complete meal for dinner and leave you fully satisfied. A very simple green salad would work excellently as a side dish. The lighter the dressing the better. If you’re more hungry, you could eat this with some baked sweet potato, add some homemade olive oil croutons, or enjoy some incredible Tomato and Basil Bruschetta.
Like It Sweet?
Depending on what variety of apple you use, this salad will already have a level of sweetness with the apples and grapes. But sometimes I like my salads a little sweeter. If this is the case, why not wait before adding your mustard and/or mayonnaise to the salad? Instead, quickly combine the mustard with honey, olive oil and a little salt for a dressing that literally takes one minute. If you’re making up a dressing, why not massage some of it into the chicken breast as a marinade? Smart, eh? Skinny Mustard Chicken Salad
- 1 1/2 pounds cooked boneless skinless chicken breast chopped
- 1/4 cup chopped celery
- 1/4 cup minced chives
- 1/3 cup seedless grapes quartered
- 1/4 cup apple cored and chopped
- 2 Tablespoons chopped pecans
- 1/4 cup paleo mayonnaise
- 2 Tablespoons yellow mustard
- Beefsteak or Hothouse tomato slices for serving
- Combine all ingredients in a medium mixing bowl until well blended.
- Add more mayonnaise and/or mustard to taste if needed.
- Serve on tomato slices.
