This is a chopped-type, crunchy, salad… the kind  that takes half an hour to eat while you enjoy every little bite.

This recipe is not only an easy one to scale up to feed a crowd, it’s also hearty enough to be a complete meal for dinner and leave you fully satisfied. A very simple green salad would work excellently as a side dish. The lighter the dressing the better. Depending on what variety of apple you use, this salad will already have a level of sweetness with the apples and grapes. But sometimes I like my salads a little sweeter. If this is the case, why not wait before adding your mustard and/or mayonnaise to the salad? Instead, quickly combine the mustard with honey, olive oil and a little salt for a dressing that literally takes one minute. Skinny Mustard Chicken Salad

This easy side dish is simple to make and tastes great! Combine ingredients together for a light and flavorful addition to any meal.

Ingredients

  • 1 1/2 pounds cooked boneless skinless chicken breast chopped
  • 1/4 cup chopped celery
  • 1/4 cup minced chives
  • 1/3 cup seedless grapes quartered
  • 1/4 cup apple cored and chopped
  • 2 Tablespoons chopped pecans
  • 1/4 cup paleo mayonnaise
  • 2 Tablespoons yellow mustard
  • Beefsteak or Hothouse tomato slices for serving

Instructions

  • Combine all ingredients in a medium mixing bowl until well blended.
  • Add more mayonnaise and/or mustard to taste if needed.
  • Serve on tomato slices.
