On a nutritional level, this Skinny Mustard Chicken Salad uses nutrient-dense ingredients which are both affordable and available all year round. This recipe is not only an easy one to scale up to feed a crowd, it’s also hearty enough to be a complete meal for dinner and leave you fully satisfied. A very simple green salad would work excellently as a side dish. The lighter the dressing the better. Skinny Mustard Chicken Salad
- 1 1/2 pounds cooked boneless skinless chicken breast chopped
- 1/4 cup chopped celery
- 1/4 cup minced chives
- 1/3 cup seedless grapes quartered
- 1/4 cup apple cored and chopped
- 2 Tablespoons chopped pecans
- 1/4 cup paleo mayonnaise
- 2 Tablespoons yellow mustard
- Beefsteak or Hothouse tomato slices for serving
- Combine all ingredients in a medium mixing bowl until well blended.
- Add more mayonnaise and/or mustard to taste if needed.
- Serve on tomato slices.
