The slow cooker works to make the lean chicken and whole black beans in this recipe incredibly tender and juicy. Add a little bit of your favorite salsa (We love our Tex-Mex Salsa recipe) and pile some of this easy dish upon a whole-wheat tortilla, and you’ve got yourself a healthy, yet hearty meal, with a Mexican flair!

Slow Cooker Black Beans and Chicken
- 1 pound boneless skinless chicken breast
- 15 ounces canned black beans drained, and rinsed
- 2 cups chunky salsa no-sugar added
- 8 whole wheat tortillas
- Add all ingredients to the slow cooker, except tortillas. Cook on low for 4-6 hours. Shred it with a fork and spoon into tortilla. Serve with your favorite toppings or on it's own!
