This recipe takes Mexican food to a new level!
We love recipes with minimal ingredients, and with only two main ingredients in this tasty dish, our Black Beans and Chicken fits the bill. The slow cooker works to make the lean chicken and whole black beans in this recipe incredibly tender and juicy. Add a little bit of your favorite salsa (We love our Tex-Mex Salsa recipe) and pile some of this easy dish upon a whole-wheat tortilla, and you’ve got yourself a healthy, yet hearty meal, with a Mexican flair!

Slow Cooker Black Beans and Chicken
Ingredients
- 1 pound boneless skinless chicken breast
- 15 ounces canned black beans drained, and rinsed
- 2 cups chunky salsa no-sugar added
- 8 whole wheat tortillas
Instructions
- Add all ingredients to the slow cooker, except tortillas. Cook on low for 4-6 hours. Shred it with a fork and spoon into tortilla. Serve with your favorite toppings or on it's own!

You've inspired me during the 5:00 hour. I'm pinch hitting. Only had green salsa, so threw that in. Have a jar of green Mole, which I've never tried, so threw a few Tbls. of that in with a chopped tomato. Will need to pick up black beans. Fingers crossed that it is as good as yours. I have made this recipe for a long time… both in skillet & the crock. We add onions, taco seasoning & cumin (yes, the taco seasoning adds a bit of salt BUT gives it an awesome flavor!). We also just use rotel (either the hot or original, depending on our mood). We also don't drain anything until before serving so all the juices merge & flavor it all.

Hi there! This recipe looks great and I am armed with ingredients to try it. I'm unclear how the calorie amounts can be figure when there are no measurements specified in the ingredient list. Do you by chance have the measurements/weights needed?

I'm sorry, but can you clarify — do you put the chicken, beans, salsa AND tortillas in the slow cooker, or are the tortillas for after the other three ingredients cook?
Tortillas do not go in the slow cooker. Add the chicken to the tortillas after cooking and shredding.
I'm still not clear as to the correct amount of chicken is. I estimated at a pound. Hope it turns out OK.
This is in my crockpot right now for dinner tonight! I took one of the posted suggestions and added a packet of low-sodium taco seasoning and a few shakes of cumin. My house smells delicious! I can't wait to try it!
This was great! I added some tomatillos that stewed along with everything else and added a nice flavor. I made some fresh guacamole to add to the finished product. It was very delicious and my husband loved it, too!
Do you happen to know how many points it is w/out the tortilla?

Your chicken "fits my bill" LOL. I'm using this tongight, as I'm supposed to have some chicken and dairy for dinner in my Loaded Gun diet.
Does anyone know the nutrition facts for this without the tortilla? Tortilla nutrition ranges so much that I would simply like to know what half a cup of the chicken, beans, and salsa would be. Then I can factor in the best tortilla I can find. Love this recipe though!
Christina, This nutrition data has been updated with our new calculator and does not include the tortilla. Lettuce also works in place of a tortilla. 🙂
Does anyone know the nutrition facts for 1/2 a cup of the slow cooked chicken, beans and rice without the tortilla? And about how many onces of chicken would you say for breast fillets are equal to?
Christina, That nutrition info was older and has been updated with our new calculator without the tortilla. Lettuce makes a nice wrap as well in place of a tortilla. 🙂

Maree, I recommend any salsa that has no added sugar. I look for whatever is on sale, but my favorites are: Simple Truth Organic (Kroger brand), Pace, and Amy’s.
I have been making a very similar recipe but I add a can of corn. I like using Newman’s own salsa with either pineapple or peach.
