Slow Cooker - Hot Chocolate Steel-Cut Oatmeal

Keep it simple and clean with this scrumptious oatmeal and its comforting chocolatey flavor.

Ingredients

  • 1 cup steel cut oats
  • 4 cups water
  • 1/2 cup coconut milk
  • 1 tablespoon cocoa powder
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 1 tablespoon coconut palm sugar or pure maple syrup
  • 8 liquid stevia drops (or an extra tablespoon of sugar)

Instructions

  • In a large bowl, combine the water, milk, vanilla, and stevia. Whisk in the cocoa, sugar, and salt.
  • Finally, stir in the oats. Oil the inside of your slow cooker (this prevents the oatmeal from sticking). Pour in the above mixture.
  • Set your slow cooker to LOW for 1-2 hours, and turn it to KEEP WARM before finally retiring to bed. In the morning, give it all a stir and feast! Top with some shaved chocolate if you’re feeling really decadent!

    1. Sheri, I'm not sure since I've never frozen this recipe. I'm too sure oatmeal would taste too great after being frozen. 🙁

  1. The recipe sounds great but I had calculated the points based on the nutritional values listed here and it came to 6 points..

  2. How are you calculating the nutritional value? 1/4 c of dry Steele cut oats has approximately 150 calories, cooking the oats doesn’t change the calories. The recipe calls for 1 c of oats and serves 4, so I am essentially eating 1/4 c. What am I missing?

      The data is correct. 1/4 cup of dry oats is only 74 calories. 1 cup of dry oats, plus any extra ingredients, comes to about 4 (1-cup) servings when cooked.
