Ingredients

  • 1 pound Yukon gold potatoes
  • 2 tablespoons black truffle oil
  • 3 tablespoons plain Greek yogurt
  • 1/4 cup skim milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon fresh thyme, chopped

Directions

  1. Wash potatoes, leave skins on, and place in large soup pot and cover with water. Bring to a boil and cook until potatoes are soft. Drain and transfer to mixing bowl.
  2. In large mixing bowl, add remaining ingredients to potatoes. On medium high speed, whip until fluffy. If potatoes are too dry, add more skim milk 1 tablespoon at a time. Serve and enjoy!
