Are you one of those people who think “sandwich” must mean “bread?” Well, we’d like to challenge that thinking with our bell pepper turkey sandwich recipe! Instead of carb-heavy bread, we are going to base our sandwich on a flavorful, crunchy bell pepper! While our recipe calls for a red pepper, you can feel free to substitute any color pepper you like.

Bell peppers are a great source of nutrition, as well as flavor. They are a terrific source of beta-carotene as well as Vitamin A. Low in calories, an average pepper has only 7 grams of carbs — perfect for that low-carb lifestyle.

Making Your Bell Pepper Turkey Sandwich

Bell peppers, freshly sliced turkey, bacon, cucumber, and more create absolutely scrumptious sandwiches!

To begin our sandwich, we’ll cut the bell pepper in half and take out the seeds and veins. If you want to make it more breadlike, you can also flatten the pepper by slicing off the curved pieces of the pepper, although you will end up with less pepper that way.

We’re going to add flavor and creaminess (and fat, for those of you keto-ing!) by spreading both cut sides of the pepper with a vegetable-flavored spreadable cheese. Again, feel free to vary the type of spreadable cheese you use, based on your own preferences.

Now, we’ll add sliced deli turkey to both sides of the cheese-spread pepper. For extra flavor, we’re going to top one side with a crisp slice of cooked bacon, then add some more veggies and flavor by topping that with cucumber and a 1/4 of an avocado (mmm…more healthy and tasty fats!) — you can slice that or mash it, as you choose. If you are using regular waxy-type cucumbers, we recommend you peel them before slicing thinly. If you use a hot-house cuke, there’s no need to peel it first.

Finally, you are ready to put your sandwich together! If you like, you can cut it, but use a serrated knife to get through the layers neatly. Voila! You have a breadless sandwich that’s fresh, healthy and….did we mention it TASTES terrific?

Add Some Variety

This is a super healthy, well-rounded lunch option.

For some other variations on the theme, you might want to try a Poblano pepper for a little kick. There’s artichoke and jalapeno-flavored spreadable cheese if you want to increase the zip. Want to upscale your bacon a little? Crisp up a piece of prosciutto or pancetta and use that instead. Not a fan of cukes? No worries. Pickles are a nice substitute and a traditional sandwich topping.

The point is, the bell pepper turkey sandwich is a different way of looking at your traditional sandwich. Once you’ve tried this recipe, you’ll no doubt come up with other ways to customize it and develop dozens of flavor variations! You’ll never be bored with your “average” sandwich again!

Ingredients

  • 1 red bell pepper
  • 1 tablespoon garden vegetable cream cheese
  • 1 slice bacon
  • 3 slices deli turkey
  • 4 cucumber slices thinly sliced
  • ¼ avocado sliced

Instructions

  • Slice the bell pepper in half and remove the seeds and veins.
  • Spread cream cheese on both sides of the bell pepper.
  • Layer both sides with turkey slices. Then add bacon to one side of the bell pepper. Then add the cucumber slices and avocado slices to the other side of the bell pepper.
  • Assemble the sandwich by placing the side with the bacon on top of the other side. Cut the bell pepper sandwich with a serrated knife.

Notes

Use a different colored bell pepper if desired.
Substitute bacon for turkey bacon
