Ingredients
- 1 cup brown rice cooked
- 2 cups boneless and skinless chicken breast cooked and shredded

- 1/2 cup kalamata olives chopped
- 3 tablespoons orange juice no sugar added
- 2 tablespoons lemon juice
- 1 tablespoon fresh mint chopped
- 2 tablespoons fresh cilantro chopped
- 2 teaspoons olive oil
- 1 tablespoon apple cider vinegar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon crushed red pepper
- 1/2 teaspoon kosher salt
- 1/4 cup almonds slivered
- 1/4 cup apricots dried, chopped
- 8 kale leaves large, stems carefully removed
Instructions
- Combine all of the ingredients except for the kale. Mix well, cover, and let sit for 15 minutes.
