Cheesy Fresh Sweet Corn
Ingredients
- 2 tablespoons olive oil
- 1/2 cup onion diced
- 5 ears corn shucked and kernels cut off
- 1 garlic clove minced
- 1 teaspoon black pepper
- 1/2 teaspoon sea salt
- 1/2 teaspoon paprika
- 1 1/2 tablespoons whole-wheat flour
- 1 1/4 cup milk 2%
- 3 ounces neufchatel cheese
- 1/4 cup parmesan cheese grated
Instructions
- Heat a medium saucepan over medium heat and add the olive oil. When shimmering, add the onion and cook until soft, about 5 minutes.
- Stir in the corn and the garlic, and cook for 1 minute. Add the seasonings and the flour, and cook for an additional 2 minutes.
- Whisk in the milk, and stir until bubbly. Continue cooking for 3 minutes and turn off heat.
