This dish is super high in protein– thanks to ingredients like lean boneless, skinless chicken breast and feta cheese. Both of these ingredients are very high in protein, which supports healthy muscle growth, satiety, and metabolic function. It’s important to eat enough protein throughout the day, so we suggest trying to include at least one serving of protein (about 3.5 oz) per meal. Luckily, this meal fits the bill perfectly!

Make this Greek chicken with feta and tomatoes recipe in less than half an hour! Start by seasoning chicken with salt and pepper. Heat some olive oil over medium-high heat. Once hot, add the chicken. Cook for 4 to 5 minutes on each side, or until completely cooked through and golden on the outside. Remove the chicken from the pan and keep warm.
Pour the remaining olive oil into the pan and add oregano, basil, garlic, and tomatoes. Cook the herbs and veggies over medium-high heat for 3 to 5 minutes, or until the tomatoes soften. Meanwhile, cook the couscous according to package directions. Place a half-cup of cooked couscous on each of six plates. Slice the chicken and divide it evenly among the plates. Top each dish with an equal amount of tomato mixture, cucumber, and feta cheese. Serve immediately and enjoy!

Chicken with Feta and Tomatoes
Ingredients
- 2 pounds boneless and skinless chicken breasts
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 3 teaspoons olive oil divided
- 1 teaspoon dried oregano
- 2 teaspoons dried basil
- 2 teaspoons garlic minced
- 1 pint grape tomatoes
- 3 cups whole wheat couscous cooked
- 1/2 cucumber medium, finely diced
- 2 ounces feta cheese crumbled, reduced-fat
Instructions
- Season chicken with salt and pepper. Cook in 2 teaspoons oil over medium-high heat, 4 to 5 minutes on each side, or until done. Remove from pan and keep warm.
- Add remaining 1 teaspoon oil to pan; add oregano, basil, garlic and tomatoes. Cook over medium-high heat 3 to 5 minutes, or until tomatoes soften.
- Meanwhile, cook couscous according to package directions.
