Throwing this chickpea crust recipe together is a breeze. First, combine the chickpea flour with kosher salt and rosemary. Next, create a crater in the center of the flour mixture and add two teaspoons of olive oil. Add half of the water and continue to mix. Gradually add the remaining water until your mixture turns doughy. Knead the dough before forming it into a ball. Coat the dough ball with the remaining olive oil, cover it with a towel, and allow it to rest. After 15 minutes have passed, you can start making your pizza!

Chickpea Thin Crust Pizza Crust

Easy vegan and gluten-free crispy pizza crust.

  • 2 cups chickpea flour
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground rosemary
  • 3 teaspoons olive oil
  • 1 cup warm water more as needed


  • In a large mixing bowl, combine the chickpea flour, kosher salt, and rosemary. Mix well.
  • Create crater in the center of the flour mixture and add 2 teaspoons of the olive oil and about half the water. Mix well, continue to gradually add water until a dough ball forms. If needed, more than 1 cup of water can be added until dough reaches desired consistency.
  • Form the dough into a ball and rub with remaining olive oil. Gently cover with a towel and let rest for about 15 minutes.
  • Form into a crust and create your favorite pizza! See notes below for baking pizza.


For baking pizza follow the instructions below:
Preheat oven to 375 degrees. Place crust on a nonstick baking pan and bake until lightly brown, about 10 minutes. Be sure to check the bottom of the crust as well. I check my crust after 5 minutes and again at 10. Add 1-2 additional minutes if needed in order to achieve a golden crust.
Add sauce and your favorite toppings, return to the oven and bake until cheese is melted and bubbly.

  1. Are you supposed to pre bake the crust a little before adding toppings? That would have been good to indicate in the instructions.
