Headed into a chilly work week surrounded by snow and ice? I know the feeling. I also know that it’s best to warm it up with our Slow Cooker Black Bean and Veggie Soup. Full of hearty and chunky veggies while still full of protein from the black beans, this recipe will become your go-to for a cold weather work week. It’s become mine!
I must admit, it is hard to hold myself back from digging into it while I’m prepping it since it really makes the house smell so delicious!
The sweet potatoes in this recipe are what I think really make the dish. Not only because of their flavors, but also because of their nutritional value. Sweet potatoes are:
- Anti-inflammatory
- Aid in learning
- Improve muscle function
- Great sources of potassium
- Rich in vitamins C and A
- Metabolism boosting
Sweet potatoes and, therefore, this soup are both yummy AND nutritious!

6. Tomato, Hummus and Spinach Sandwich
Fit for all vegetarians and non-vegetarians, this recipe for a tomato, hummus and spinach sandwich will make you wonder why you ever ate a BLT in the first place! Seasoned with crushed black pepper and a pinch of salt, you’ll be craving this sandwich way before lunch hour! I know I do!
Hummus has a special place in my heart. Hummus is great for vegetarians and non-vegetarians alike because it aids in digestion, improves both cardiovascular health and muscle movement. It is also a good source of fiber, and contains a good amount of protein thanks to the chickpeas that it’s made out of.
On top of the mouth-watering hummus and veggies on this sandwich, it also has a sprinkle of smoked paprika for an added kick that brings those taste buds into high gear.
7. Clean Eating Chicken Salad
Chicken salad – the go-to recipe for any leftover rotisserie chicken. However, traditional chicken salad is often loaded with mayonnaise and is, therefore, not the healthiest. Our recipe, on the other hand, is. Our chicken salad swaps out that mayo for Greek yogurt (a food known to aid in weight loss).
So, with this recipe, you can feel free to repurpose your rotisserie chicken into a delicious batch of chicken salad without feeling guilty about it. This chicken salad is tossed with nutritious ingredients like celery and, my favorite: grapes!
The grapes really give it that extra burst of flavor that every meal needs. They also help to provide your body with all of the healthy vitamins it needs to wash out any unhealthy toxins and to keep you feeling your absolute best.
I love to pair this recipe with a slice of pita bread atop a bed of lettuce. It’s a match made in heaven!
