If you long for the days when you could just slap together a simple sandwich and call lunch done, we’ve got great news for you. This fresh and quick Tomato, Hummus, and Spinach sandwich is easier to make than sliced bread.

Savory storebought hummus (pick your favorite flavor!) adds quick flavor and oodles of plant-based protein to your afternoon. The addition of a bright, ripe tomato and crunchy lettuce or spinach leaves makes for a perfect flavor match (with superfood benefits).

Hungry for a lunch that satisfies? Grab a loaf of your favorite mulitgrain or gluten-free bread, and prep this sandwich. You’ll be enjoying a healthful meal in just 60 seconds or less. You body (and tastebuds) will thank you for it!

How do you get 4 servings out of 2 slices of bread? I hope that this recipe is supposed to be 1 serving.

Carolyn, That should be 2 servings for 1/2 sandwich per serving. We’ll make the corrections and recalulate the data. Thanks so much for pointing out the misprint. 🙂

This picture clearly has something else on it, looks like a fried egg?

I would make only one change to this perfect sandwich. Sprinkle the salt on the tomato. Not only will the salt slide off the spinach, but a little salt on a tomato is divine.

If you use Nature’s Own Life bread that is one point a slice you can have the whole sandwich for 4 points

I’m totally going to try this! I don’t even use mayo any more on my sandwiches! Thanks for the recipe!

Delicious sandwich. I used Oroweat Sandwich Thins 100% Whole Wheat and 1 roll (as they call it) top and bottom was 4 points. Quick and easy lunch. Thanks for the recipe!
