Our cranberry crumble bites are the perfect portion to crush cravings!

One of the best recipes my mom made growing up was a cranberry crumble muffin. She would make them around the holidays when we had guests visiting, and it was always a delicious and impressive treat! Now that I’m older, I’ve kept the tradition going. I put my own healthier spin on them these days, though and turned them into bite-sized balls instead of muffins so that I can have that same amazing flavor in a quick, lower-calorie snack. These easy cranberry crumble bites are still one of my favorite treats, and if you love cranberry as much as I do, I think you’re going to adore them, too!

It can be so hard to find filling and flavorful snacks that are also completely vegan and easy to transport. Luckily, these cranberry bites are the whole package with their sweet and citrusy flavor, small size, and 100% plant-based ingredients. Please note: One of the crumble coating ingredients is graham cracker crumbs, which are usually vegan, but double check because some brands are not (they may contain honey). You can also make the crumble coating without the graham crackers, you just won’t get the same crumbly effect. 

Customize Your Nut Butter

Whip these up for a weekday snack or your next get together!

This recipe calls for nut butter, so any nut butter of your choosing will work! If you go for almond or cashew butter, it will have a lesser impact on the flavor than peanut butter would. Or, if you are allergic to nuts, try sun butter which is made from sunflower seeds. Either way, any nut butter will work for this recipe so feel free to use whatever you have on hand!

It is so easy to roll up these cranberry crumble bites. Combine all of the ingredients in a food processor and blend until smooth. Meanwhile, combine the crumble coating ingredients and spread them onto a plate. Roll the blended ingredients into 1” balls, then roll evenly over the crumble coating to cover. Let the bites set in the refrigerator for at least one hours before enjoying!

Cranberry Crumble Bites

Ingredients

Bites

  • 1 1/3 cup rolled oats
  • 2 tablespoons chia seeds
  • 1/4 cup dried cranberries
  • dash of sea salt
  • 1 cup nut butter
  • 1/4 cup maple syrup
  • 1/2 orange juiced
  • 1 teaspoon vanilla extract

Crumble Coating

  • 1/4 cup shredded coconut
  • 1/4 cup graham cracker crumbs

Instructions

  • Combine all of the bite ingredients in a food processor and blend until smooth.
  • Combine the crumble coating ingredients and spread onto a plate.
  • Roll the blended ingredients into 1” balls, then roll over the crumble coating to cover.
  • Let set in the refrigerator for an hour.
