That said, even tasty avocado toast can get monotonous if eaten too often. Instead of getting bored with your morning meal, try switching it up with these easy Avocado Breakfast Tacos! 

The star of the show is still avocado, but this taco recipe delivers more protein and fewer carbs. This budget-friendly recipe requires just five simple ingredients and about 20 minutes. There’s nothing better than a quick, affordable, and absolutely scrumptious breakfast!

When it comes to healthy meal plans, eating several small meals per day has proven beneficial for many people. For those of us who enjoy this way of eating, it’s best to stick with meals containing between 200 and 300 calories per serving. 

Our Avocado Breakfast Tacos comes in at 266 calories per serving. In addition to being a low-calorie breakfast, these tacos also offer 10 grams of protein and a healthy dose of “good fats” from the olive oil, egg, and avocado. This breakfast option is also low-sugar, containing just one gram per serving, and high-fiber, with a hefty seven grams per serving!

While all you need are the five ingredients listed, we want you to feel free to make this recipe your own. Feel free to swap  out some of the standard ingredients, or add in your own favorites!

  • Not a fan of cilantro? Try red pepper flakes, thyme, tarragon, or chives, instead.
  • For extra flavor, salsa would make a fantastic addition to these tacos.
  • Add other toppings, like diced tomatoes, mushrooms, red onion, turkey bacon crumbles, shredded cheese, and more.

If you’re not gluten-intolerant and you plan on adding extra ingredients to these easy Avocado Breakfast Tacos, you may want to consider swapping corn tortillas for flour tortillas. They’re generally a bit sturdier and can hold up to the added ingredients.

Easy Avocado Breakfast Tacos

Ingredients

  • 1 teaspoon olive oil
  • 4 eggs lightly beaten
  • 8 corn tortillas warmed or lightly toasted
  • 1 avocado pit and peel removed, diced into medium chunks
  • 2 tablespoons cilantro fresh, roughly chopped

Instructions

  • Heat the olive oil in a skillet, once hot add the eggs and scramble.
  • Once scrambled, lay the tortillas on a flat surface and spoon the scrambled eggs into the middle of each tortilla. Divide the eggs evenly between each.
  • Top the eggs with the avocado and cilantro. If desired, these avocado breakfast tacos can also be topped with your favorite salsa or vegetables.
