  • 6 cups mixed salad greens of choice, chopped
  • 1 green bell pepper stemmed, seeded, and chopped
  • 1 cup mandarins or tangerine slices, fresh, jarred, or canned (no sweetener)
  • 1 cup cherry tomatoes halved (half pint)
  • 1/4 cup almonds sliced
  • 1/2 cup edamame fresh or thawed, optional


  • 1/2 teaspoon dried oregano
  • 2 tablespoons lemon juice freshly squeezed or red wine vinegar
  • 1/2 teaspoon dijon mustard
  • 1/4 teaspoon kosher or sea salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon extra virgin olive oil


  • Whisk together oregano, lemon juice (or red wine vinegar), dijon mustard, salt, and pepper. Slowly drizzle in olive oil, whisking while pouring.
  • Toss all salad ingredients together in a large salad bowl.
  • Add salad dressing and toss or serve on the side.
  • Enjoy!
