Ingredients
Salad
- 6 cups mixed salad greens of choice, chopped
- 1 green bell pepper stemmed, seeded, and chopped
- 1 cup mandarins or tangerine slices, fresh, jarred, or canned (no sweetener)
- 1 cup cherry tomatoes halved (half pint)
- 1/4 cup almonds sliced
- 1/2 cup edamame fresh or thawed, optional
Dressing
- 1/2 teaspoon dried oregano
- 2 tablespoons lemon juice freshly squeezed or red wine vinegar
- 1/2 teaspoon dijon mustard
- 1/4 teaspoon kosher or sea salt
- 1/4 teaspoon black pepper
- 1 tablespoon extra virgin olive oil
Instructions
- Whisk together oregano, lemon juice (or red wine vinegar), dijon mustard, salt, and pepper. Slowly drizzle in olive oil, whisking while pouring.
- Toss all salad ingredients together in a large salad bowl.
