Meatless Mondays are sweeping the country, and Skinny Ms. is passionate and excited about providing healthy and delicious recipes to inspire our readers to to incorporate meatless meals into their weekly routine.

A bit of history…Meatless Monday’s roots lead back to World War I, and were started by Herbert Hoover and Woodrow Wilson. In an effort to combat food shortages and help the war effort by shipping more food overseas, Americans were asked to abstain from eating meat on Mondays.

The Meatless Monday campaign was revived in 2003 by John’s Hopkins Bloomberg School of Public Health who advocated the health and environmental benefits associated with consuming less meat.Endorsements abound from celebrity chefs, cooking shows, restaurants, food bloggers and hospitals nationwide, and even internationally.
