Try this Sweet Breakfast Treat
Although it sounds a bit unconventional, these cookies can be the perfect breakfast treat! They’re made with healthy and hearty ingredients that will satisfy the whole family! Just grab one on your way out or pack them up to take on the go. You can even save them for a healthy snack or dessert later in the day, as well! The macronutrient balance makes these cookies a great preworkout snack too. Keep one in your gym bag to munch on 30 minutes before your workout!
Packed with Great Ingredients
There are so many fantastic ingredients in these cookies that are very nutritious and perfect for keeping you full and energized throughout the day. Grains like rolled oats, whole wheat flour, and ground flaxseed offer tons of fiber, which helps fill you up and supports healthy cardiovascular function. Bananas and raisins both pack in the potassium for healthy muscle function, while walnuts and peanut butter give you a healthy fat and protein boost.
Serve them Up for a Balanced Breakfast
While these cookies are excellent on their own, eating one with a piece of fruit and some Greek yogurt is a fantastic way to turn them into a well-rounded, belly-filling meal. You can serve them as a sweet side to a savory breakfast too, like our Asparagus and Egg Scramble. Perhaps one of our favorite ways to enjoy these oatmeal cookies is to take a few moments to relax and savor them while sipping on a warm beverage (try our Toasted Coconut Coffee Sweetener for an extra healthy chill sesh!)
Meal Prep these Oatmeal Breakfast Cookies
Prep these breakfast cookies to have breakfast ready for the whole week! Begin by preheating your oven to 350 °F and lining a baking sheet with parchment paper. Combine the mashed banana, oat milk, honey, peanut butter, and ground flaxseed in a large bowl. In another bowl, mix together the oats, flour, cinnamon, baking powder, and salt. Gradually mix the dry ingredients into the wet ingredients until a dough is formed. Then, gently fold in the raisins and walnuts. Form the dough into 12 balls and spread them out evenly on the baking sheet. Bake for 10-12 minutes or until the edges are golden in color. Let them cool and enjoy!
You can store these cookies in an airtight container for up to one week (if you can make them last that long… 😏).

Can this be made gluten free? I’m not familiar with substituting different flours.
Thank you
A GF flour mix should work fine.
Can I use gluten free flour to make breakfast cookies?
Flo, As I said below, a GF flour mix should work fine.
Would it work if I made them and then froze them until I needed/wanted them?
Amanda, Definitely! Freeze in a freezer safe container and thaw in the fridge overnight.
