Combine superfoods in today's breakfast!

Are you feeling a little uninspired on the breakfast front these days? Wishing you could wake up to something you actually want to eat, and not only that, could feel good about eating? Well dream no more, dear friends, because Skinny Ms. has the egg and avocado toast recipe to knock your morning socks off! Without knocking over your coffee.

You know that you need a serious dose of protein in the morning to keep you energized throughout the day, and you’ve always loved your morning egg. And you know you need a little bit of healthy carb action to give yourself some fuel to burn, so a slice or two of multigrain toast sounds good, too. And adding avocado would definitely make your taste buds smile, not to mention all of the antioxidants, dietary fiber, healthy fats, vitamins, and minerals the avocado contributes to your morning meal. So what better way to combine all of this necessary and desired goodness into a tasty morning treat? Skinny Ms. Egg and Avocado Toast, of course!

We’ve added some black pepper to our recipe to give a little zing to your step. And a touch of coconut oil in your scrambled eggs provides a welcome hint of tropical vacation to your morning, without weighing you down with the excess fat and cholesterol in cream, milk, or butter. Are you with us now? We thought so. So what are you waiting for? Dig in!

  1. I just read this before making breakfast, and I have ripe avocados! I made it without the toast and added some salsa…super yummy!

  2. this is really good. If I used a slice of yam instead of toast, would the points be lower? I’m trying to stick to 6 points for breakfast
