Root Vegetable Salad with Sweet Potato Crunchies
- 1 jicama medium
- 1 chayote squash
- 2 carrots
- 1/2 cup salsa no sugar added
- 1 cup sweet potato crunchies recipe for sweet potato crunchies
- Peel all vegetables and dice. In a medium mixing bowl, toss vegetables to combine. Add 1/4 recipe to salad plate, top with 2 tablespoons salsa and 1/4 cup sweet potato crunchies.
