Beans themselves are a great source of protein and fiber. And because you’ll be cooking with dry beans, you’ll get a nice healthy amount of nutrients including antioxidants, vitamins, and minerals such as copper, folate, iron, magnesium, manganese, phosphorous, potassium, and zinc.

Ingredients

  • 2 tablespoons canola oil optional extra-virgin olive oil
  • 1 medium sweet onion diced
  • 1 clove garlic minced
  • 1 medium green or red bell pepper diced
  • 2 teaspoons smoked paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 tablespoon apple cider vinegar
  • 2 tablespoon spicy brown mustard optional stone ground or Dijon Mustard
  • 1/2 cup ketchup
  • 1/3 cup coconut sugar more or less to taste
  • 2 28-ounce cans baked beans we used Bush's Vegetarian Beans

Instructions

  • Saute onion in oil for 5 minutes. Add garlic and saute for 1 additional minute.
  • Add all of the ingredients to your slow cooker.
  • Cook on low for 4-6 hours or on high for 2-3 hours.

Notes

For bacon lovers, feel free to crumble in 2 slices cooked and crispy bacon, pork or turkey.
