Once cooked through, strain out the veggies, keeping about two cups of the broth (you may want to add more later for a thinner soup).

Puree half of the strained vegetables while leaving the other half in cubes. Return the pureed mixture to the pot, along with the reserved cubed pumpkin and squash. Stir in the coconut milk and more broth if needed. Add salt and pepper until it tastes just right.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion medium, peeled, 1" dice
  • 2 garlic cloves peeled, minced
  • 2 teaspoons cardamom ground
  • 1 teaspoon cumin ground
  • 1 pumpkin small, peeled, seeded, cut into 1" cubes
  • 1 butternut squash large, peeled, seeded, cut into 1" cubes
  • 2 acorn squash small, peeled, seeded, cut into 1" cubes
  • 6 cups vegetable broth
  • 1/2 cup coconut milk
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper ground

Instructions
