White Bean Avocado Toast
Ingredients
- 1/2 cup white beans canned, drained and rinsed
- 2 teaspoons tahini paste
- 2 teaspoons lemon juice
- 1/2 teaspoon kosher salt
- 1/2 avocado peel and pit removed
- 4 sliced whole-grain bread or your favorite bread, toasted
- 1/2 cup grape tomatoes cut in half
Instructions
- In a small bowl, combine the beans, tahini, half the lemon juice, and half the salt. Mash well.
- In a second bowl combine the avocado, remaining lemon juice, and remaining salt. Lightly mash.
- Spread the mashed beans on to the toast. Spoon the avocado on top of the beans and top with tomatoes. Serve and enjoy

What kind of white beans do you use? Garbanzo, canellini, great northern, white kidney….?
Any white bean will work – I personally prefer navy beans.

Gigi, As you know, avocado tends to turn brown rather quickly. One-two days is about as long as you can expect it to last. Best advice, eat right away! 🙂
I’m sure you drain the beans before smashing, but do you have to rinse them? I’m super new to plant based!
Teri, You do drain the beans. Rinsing helps to remove the extra sodium but is not required.
