Our zucchini bell pepper pizza recipe is packed with healthy ingredients and is a great alternative to common delivery pizza. They want food that is fast and easy, and in many cases they are actually addicted to the bad ingredients found in these foods. Salt and sugar and other chemicals get into our systems and leave us wanting more and more. No matter how much we eat, our bodies are always deprived and addicted to bad things.

Zucchini-Bell Pepper Pizza
Ingredients
- 1 tablespoon extra virgin olive oil
- 2 garlic cloves minced
- 1 red onion small, cut in half and then thinly sliced
- 1 cup bell peppers sliced
- 1 zucchini small, sliced
- 1/2 cup pizza sauce (Skinny Ms. recipe)
- 1/2 cup sun dried tomatoes diced or 2 Roma tomatoes, sliced
- 8 green olives diced
- 1 tablespoon fresh basil chopped
- 1/2 cup skim mozzarella cheese shredded
- 1 whole wheat thin pizza crust 10 or 12 inch
Instructions
- Preheat oven to 450°.
- In a large skillet, add oil, and sauté on medium-low heat for 1 minute, the garlic, onion, bell peppers (if using the Balsamic Bell Pepper recipe, do not sauté with the other ingredients), and zucchini slices.
- Spread sauce over the crust, leaving 1 inch around the edges dry. Evenly distribute onto crust the garlic, onion, bell peppers, zucchini, sun-dried tomatoes, olives, basil, and mozzarella cheese. Preferably, place pizza directly onto middle oven rack. Otherwise, place pizza on a large cooking stone or cookie sheet. Bake 10 minutes or until cheese is melted and bubbly.

We tried this the other night and YUMMOOOOO! Love the freshness! I accidentally saute'ed the veggies a little too long, but I learned next time to go with the "raw look." Still VERY tasty! Might add fresh mushrooms next time! 🙂

We made this last night and I have to say it was incredibly delicious!! We made a couple of alterations such as adding mushrooms and grilled chicken and seriously I think I could eat this every night!!!!

This looks great…love how you break down servings calories etc. Have a question..have you tried the flatout wraps as a pizza base? I think it would work. wonder about servings etc if I did so. Any advice on how to break that out would be great. Thanks

Thanks!! I guess they are a tortilla wrap but I have seen tomato an spinach versions of the brand..really like them for a hearty lunch about 90 calories a wrap. I am really trying to change my ways and eat clean and healthy…love your recipes..they are helping someone who loves to tear up the kitchen.
This didn't come across to me as something I would like, but I'm always down to try new things and I loved it. Very delicious!
I make a like this but I use Whole Wheat Tortillas as the crust. I also don't have to use the oven unless I'm making quit a few. I use my cast Iron skillet to make one side of the tortilla crispy with a little cooking spray, then turn it over and add my ingredients for the topping and put a lid on the skillet for the cheese to melt.
My help tip: use cooking spray to sauté your veggies, you will save hundreds of calories.
