Put your slow cooker to use so you don't have to slow down your day!

22. Slow Cooker Chicken and Rice Casserole
I’m a huge fan of casseroles, and the main reason I am is because I love mixing all of the foods on my plate together, and in a casserole, they’re already mixed together for me!
This casserole mixes together rice, chicken, cheese and even some veggies. I can’t get over how much flavor is in every single bite!
23. Slow Cooker Turkey and Chickpea Chili
The health benefits of chickpeas are incredible. Here are some that will surely make you want to eat more:

- High in protein

- High in fiber
- Low in calories
Try this chili to get those incredibly healthy chickpeas into your diet!
24. Slow Cooker Breakfast Casserole
I love enjoying this breakfast casserole post-workout. Everyone has their own work out strategies depending on what works best for them. I, personally, perform my best when I work out first thing in the morning–even before eating.
Since this casserole contains 13 grams of protein in just one 198 calorie serving, it’s great after a killer workout.
25. Slow Cooker General Tso’s Chicken
My family has multiple family traditions that involve Chinese food. Christmas Eve at my parents’ house, Halloween night at my Poppop’s–we choose Chinese food for many of our favorite holiday meals on top of enjoying it on many Friday nights, eating it on the couch while watching a movie together.
As someone who loves to take part in those festivities, but also loves eating healthy and staying fit, I love this recipe. It allows me to do both, and it was even a hit for my family members who watch their weight less than I do.
26. Slow Cooker Winter Vegetable Medley
Winter vegetables are my favorite vegetables! They’re warming, colorful, and I find them to be the most filling. This soup has carrots and squash–two of my absolutely favorites, making this soup also one of my absolute favorites.
I think the meal is absolutely perfect with some warm quinoa after a long winter hike outside with my boyfriend and dog.
27. Slow Cooker Almond Rice Pudding
This rice pudding is made with almond milk instead of dairy milk, which means it’s a great dish for vegans as well as those without any special diets! It also calls for chia seeds which are a great source of omega-3’s.
When I eat this dish, I usually do so in the mornings after working out. Oddly enough, my sweet tooth is usually the strongest in the morning, so this naturally sweet rice pudding recipe is a fantastic healthy option to satisfy it. On top of that, one serving contains 12 grams of protein–perfect for post-workout!
28. Crockpot Cauliflower Fried Rice
Both vegetarians and meat lovers can enjoy this meal. Vegetarians, enjoy the cauliflower fried rice with just the vegetables and simple additions. Meat lovers, add in the optional ham bits.
Or, if you’re like me, and prefer to have it without the meat, but also make dinner for people who do love meat, make the dish without the ham and then pair it with one of our chicken recipes for your meat-eating friends and family members.
