This Light, fluffy, and simply delicious cloud bread will be the new bread of your dreams!

Named after it’s cloud-like appearance, cloud bread is one of our favorite almost-no-carb bread options. It can be used in so many different ways! Here at Skinny Ms., we love to find recipes that fit everyone’s preferences, however, we know that not all replacements are the same. This 4-ingredient cloud bread is ultra-low-carb, gluten-free, and perfect for those on the keto or Atkins diet. It is light, fluffy, delicious, and surprisingly filling.

Cloud bread is a great, carb-friendly alternative for regular bread.

The possibilities are endless with our fluffy cloud bread. You can use it for sandwiches, toast, muffins, pizza bases, for dipping, or even as a dessert with a sweet topping. There are just tons of options with this recipe! We don’t list any specific additions to our recipe, but you can add whatever you’d like to the base. Try mixing in fresh rosemary, ground cinnamon, or everything seasoning for some different flavors. Or, you can top this cloud bread with pizza sauce and toppings, berries and whipped cream, or hummus and veggies.

As mentioned above, this recipe is gluten-free, keto-friendly, and great for those looking for low-carb options. The main ingredient is protein-rich eggs, which are separated to get both rich flavor and fluffy texture. The yolk is combined with the cream cheese to hold this bread together and offer a rich, creamy flavor while the egg whites are whipped with cream of tartar and salt for the highest peaks of perfection. When combined, you get a delicious, cloud-like dish. 

How to “Whip” this Bread Up

This light and airy bread only contains 1 carb per serving!

First, prep your oven by preheating it to 300 degrees Fahrenheit. Separate your eggs and place the egg yolks into a medium bowl. Add the cream cheese and beat it with a hand mixer until smooth. If you are including any seasoning in this recipe, I suggest you mix it in with the yolk and cream cheese at this time.

In a separate medium bowl, add the egg whites, cream of tartar, and salt. Whip this mixture with a hand mixer, making sure to thoroughly clean the beaters if using the same one as the yolks. Continue to whip the egg whites until stiff peaks form. Gradually add the yolk mixture into the whites a little bit at a time, and gently fold it together until combined. Take a quarter-cup of the mixture and drop it onto a cookie sheet that has been lined with baking paper. Be sure to leave spaces between each dollop so that they don’t touch. Bake them for 15 to 20 minutes, or until they turn golden brown in color.

You will know the bread is finished if the center of each piece doesn’t jiggle when moved. Allow your cloud bread to cool, then gently peel each round off the parchment paper. Keep in mind that this bread does not store very well so we suggest serving it immediately!

Ingredients

  • 4 eggs large, separated
  • 1/4 cup cream cheese
  • 1/2 teaspoon cream of tartar
  • 1/4 teaspoon salt

Instructions

  • Preheat the oven to 300 degrees Fahrenheit
  • In a medium bowl, beat egg yolk with cream cheese with a hand mixer until smooth
  • In a separate bowl, whip egg whites with cream of tartar and salt until stiff peaks are formed
  • Gradullay and gently add the yolk mixture to the egg white mixture until just combined
  • Take ¼ cup of the mixture and drop onto a lined baking sheet
  • Bake for 15-20 minutes until golden brown and the centers don’t jiggle when moved
  • Allow to cool, then gently peel off the parchment paper. Serve immediately
