Asian Mango Chicken Stir-Fry
Ingredients
- 1 tablespoon olive oil
- 4 boneless and skinless chicken breasts sliced
- 1 onion small, sliced
- 1 red pepper sliced
- 1 green pepper sliced
- 2 mangoes peeled and sliced
- 1 teaspoon ground ginger
- 2 tablespoons chicken stock low-sodium
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon orange juice pulp-free
- 2 tablespoons cornstarch
- 1 teaspoon black pepper
- 1/2 teaspoon kosher salt
Instructions
- Heat the oil over medium heat in a pan. Add the chicken and saute for 4 minutes. Remove chicken from the pan and add the onion. Cook until translucent, then add peppers and mango. Cook 3 minutes then return the chicken. In a small bowl, whisk together the remaining ingredients and pour over the stir fry.
- Cook for 8 minutes, then serve over rice.
