The easier (and more delicious) breakfast time is, the more likely we are to eat it regularly. And that’s important because a proper breakfast can keep you focused and fight off cravings later on. Our simple carrot cake overnight oats recipe is perfect for busy mornings and is made with healthy, delectable ingredients like sweet cinnamon and creamy oats. Whip up a few servings at the start of each week to have a ready-to-eat breakfast on hand all week long! 

Simple, Healthy, and Ready to Go

Carrot cake for breakfast? Not exactly, but close enough!

All you need to do to prep this breakfast is stir the eight simple ingredients together the night before. Feel free to make multiple servings at once, too! We recommend storing your overnight oats in a mason jar or some other container with a lid. That way, you can simply grab it in the morning and take it with you. Sometimes I’ll pack the walnuts and raisins in a little baggy so that I can toss them in when I get to my destination. With all of these high fiber, nutrient packed ingredients, you’ll stay full and energized all morning long!

Carrots are a versatile vegetable that pack a vitamin A punch, great for eyesight and immunity. Vitamin A is an important vitamin, known for its orange color and strong antioxidant content. Carrots also contain fiber, vitamin K, and potassium, all of which contribute to a healthy diet. We shredded the carrots in this recipe to get the best texture for the oats. You can also try different veggies along with the carrots, such as shredded zucchini or riced cauliflower.

All you’ve got to do to prepare these overnight oats is combine all of the ingredients together. Feel free to make multiple servings in a larger batch and then split it up into single servings afterwards. Cover you oats and chill overnight (or for up to 4 days) in the fridge. When you’re ready for breakfast, top it with walnuts, shredded coconut, and raisins for some extra omega-3’s and antioxidants.

Ingredients

  • 1 carrot shredded
  • 1/2 cup rolled oats
  • 1 cup almond milk unsweetened
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon vanilla extract
  • 1/2 teaspoon maple syrup
  • 1 tablespoon walnuts chopped
  • 1 tablespoon raisins
  • 1 tablespoon shredded coconut unsweetened

Instructions

  • Mix the shredded carrot, oats, almond milk, cinnamon, vanilla extract, and maple syrup in a container.
  • Cover and chill overnight.
  • Top with walnuts, raisins, and shredded coconut before serving.
