Get acquainted with chayote!
Chayote, technically a fruit, is a delicious addition to summer salads. With it’s mild, refreshing flavor, it’s scrumptious when gently cooked, as in this recipe, and combined with strong, delectable flavors like cumin, hot sauce, garlic, cilantro, and cherry tomatoes. Chayote is rich in fiber, vitamin C, and potassium. Paired with lycopene-rich tomatoes, this summertime salad is a winner.
Chayote Salad
Ingredients
- 1 teaspoon tabasco sauce
- 1/8 teaspoon salt
- pepper to taste
- 1/8 teaspoon ground cumin
- 1/2 cup white onions minced
- 1 garlic clove minced
- 1/2 cup cilantro leaves
- 1/2 cup cherry tomatoes
- 1 tablespoon lemon juice
- 2 tablespoons olive oil
- 2 cups chayote peeled, seeded, 1/4 inch slices
- 6 red lettuce leaves
Instructions
- In a blender, combine Tabasco sauce and salt/pepper, gradually add onions, garlic, and cilantro.
- Add lemon juice and oil to make the dressing.
- Cook chayote in boiling water until just tender, drain, and toss with half dressing, cool.
- Arrange tomatoes, chayote on lettuce leaves, and drizzle with remaining dressing.
