Our crispy and cheesy mushroom bites are stress-free and ready in just 10 minutes! They’re perfect for parties as they are easy to eat and you can quickly make more! All you have to do is follow these simple instructions:

Line a baking tray and preheat the oven to 350 degrees F. Spread your mushrooms evenly on the lined tray, making sure they are all top side down. Then, place a cheese cube in the middle of each mushroom cap. In a medium bowl, combine the crispy topping ingredients and spoon on top of the cheese on each mushroom. Drizzle with balsamic vinegar and bake for 8-10 minutes or until the crust is browned. Once finished, remove them from the oven and drizzle with olive oil. Make sure to serve immediately for the best flavor and texture.

Ingredients

  • 8 ounces mozzarella cheese diced in 1" cubes
  • 12 brown mushrooms stems removed
  • 1/2 teaspoon olive oil

Crispy Topping

  • 1/4 cup whole wheat panko breadcrumbs
  • 3 tablespoons parmesan cheese grated
  • 1 tablespoon dried rosemary
  • 1 tablespoon dried parsley
  • 1 tablespoon dried basil
  • 1 tablespoon dried dill
  • 1 red chili pepper small, chopped finely
  • 1/2 teaspoon kosher salt
  • 1 lemon zested

Instructions

  • Line a baking tray and preheat the oven to 350 degrees F

  1. The only reason I’m giving this 4 stars is because I found some of the directions vague. And it seemed a little too salty (with the parmesan cheese) so I would reduce the salt next time. But they were very delicious and easy to make. I questioned the amounts of the dried herbs…1 Tablespoon of each seemed like too much so I used just a teaspoon of each. And I did not know what a “brown mushroom” was. I used 12 good sized baby bellas and had cheese and topping left over. Were they supposed to be the full sized portabellas?4 stars
