- 1 sweet potato, cubed
- 3 red potatoes, cubed
- 2 carrots, sliced
- ½ bunch asparagus, sliced into 2 inch pieces
- 1 red pepper, sliced into bite sized pieces
- 1 red onion, quartered
- 2 cloves of garlic, minced
- 3 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon pepper
- 1 teaspoon fresh rosemary, chopped
- Preheat oven to 425 degrees. Toss all the ingredients in a bowl until everything is coated in olive oil and seasoning. Line a baking sheet or dish with parchment paper and layer everything evenly. Roast for 30 to 45 minutes until everything is cooked through and starting to brown.
