This crispy recipe calls for just a couple of simple ingredients, casting the spotlight on one of our favorite superfoods!

To crank up the nutrition even further, we’ve cooked these savory sticks with coconut oil, an ingredient that’s bursting with body-loving benefits and healthy fats. Adding a sprinkle of salt to the sticks balances out the sweetness of the potato for a drool worthy snack that will hold you over until lunch or dinner time!

How to Make Our Skinny Sweet Potato Sticks

Eat this simple snack before lunch or dinner time to hold you over!

This recipe is easy to make and absolutely scrumptious! All you need is 15 minutes to prepare these tasty sticks. Begin by preheating the oven to 350 degrees fahrenheit. Peel and julienne the sweet potatoes. Place the sticks in a mixing bowl and add the coconut oil and salt. Toss the ingredients until they’re evenly coated. Spread them out in a thin, even layer over a parchment-lined or non-stick baking sheet. Set your timer for 30 minutes but make sure to stir them and spread back into an even layer every 10 minutes. This will ensure that they get perfectly crispy all over!

These potato sticks only require three ingredients, making this a simple and delicious dish.

Ingredients

  • 1 sweet potato medium, rinsed and peeled
  • 1 tablespoon coconut oil unrefined (melted)
  • 1/4 teaspoon kosher or sea salt

Instructions

  • Preheat oven to 350 degrees.
  • Peel sweet potato and cut into julienne strips, using a Julienne Peeler.
  • Add sticks to a mixing bowl. Add coconut oil and salt. Toss to coat. Spread sticks evenly over a large parchment-lined or non-stick baking sheet. Stir every 10 minutes and continue to bake until crispy, approximately 30 minutes.
  • Watch sticks closely to make sure they don't burn. Allow to cool completely before adding to an airtight ziplock bag.
  • Enjoy!
