Spiced Chocolate and Avocado Pudding

Ingredients

  • 2 avocados ripe
  • 2 tablespoons coconut oil
  • 1/4 cup honey
  • 3 dates pitted
  • 1/2 cup cocoa powder
  • 1/2 teaspoon curry powder mild
  • 1 cup coconut milk from a carton

Instructions

  • Put all of the ingredients in a food processor and puree until smooth. Slowly add the coconut milk until you have a creamy consistency. Refrigerate until thickened.
  • To serve, top with fruit, chopped nuts or seeds, or shredded coconut.

  1. I've noticed several recipes that call for coconut milk… I typically buy lite coconut milk. Would that work?

    1. Catherine, If it is in a curry or a savory dish, chances are you can replace it with the lite coconut milk or it calls for that: https://skinnyms.com/coconut-curry-cauliflower/. If a sweet dessert-type recipe such as whipped topping https://skinnyms.com/whipped-topping/ or pudding calls for it, you will lose the creaminess and thickness if you use the lite milk. This pudding does call for the lite coconut milk: https://skinnyms.com/slow-cooker-brown-rice-puddin… but if you try to replace it for the whipped topping, you'll lose the thickness and stiff peaks. The medium chained fats in coconut are generally easy for your body to burn.
