Blend the mixture while gradually adding in the olive oil until the desired consistency is reached. If you used all of the olive oil but the pesto still seems a bit too thick, add a little bit of water until it reaches the consistency you prefer!

Vegan Nut-Free Garlic Basil Pesto

This vegan nut-free garlic basil pesto can add flavor and nutrition to a wide range of meals!
Prep Time 5 minutes
Yield 12 people
Serving Size 1 tablespoon

Ingredients

  • 2 cups basil leaves (fresh)
  • 3 cloves garlic
  • 1/2 teaspoon Kosher salt
  • 2 tablespoons lemon juice
  • 1/3 cup sunflower seeds (or pumpkin seeds)
  • 2 tablespoons olive oil
  • water as needed

Instructions

  • Combine all ingredients except the olive oil (and water if needed) in the food processor and blend well gradually add the olive oil until desired consistency is reached. If all olive oil has been used and pesto is too thick, gradually add water until desired consistency is reached.
