Grab half a cup of parmesan cheese and half a cup of your (reduced fat!) melting cheese of choice. Slice up some baby bella mushrooms, zucchini, and onions. Season your growing one-pot veggie skillet with some fresh thyme, rosemary, garlic, and pepper. Add the cheese and breadcrumbs for an irresistible texture. When your one-pot sensation is ready, top it with a delicate parsley garnish. Your craving will be satisfied, your time will be free, and your love handles will be spared. Dig in to a tasty skillet meal!
Veggie Cheese Skillet
Ingredients
- 1/2 cup parmesan cheese
- 1/2 cup swiss reduced-fat, shredded, mild cheddar or other melting cheese of choice for substitute
- 1 cup baby bella mushrooms sliced
- 2 cups zucchini sliced (about 2 medium-sized zucchini)
- 1 tablespoon thyme leaves fresh
- 1/2 tablespoon rosemary fresh, chopped
- 1/2 cup panko bread crumbs whole-wheat preferred
- 2/3 cup onions chopped
- 1 garlic clove minced
- 1/2 teaspoon salt divided
- 1/4 teaspoon ground pepper
- 1 1/2 tablespoon olive oil
- 1/4 cup parsley chopped, for garnish (optional)
Instructions
- In an oven-safe (no Teflon or plastic) sauté pan over medium-low heat, place onions in one tablespoon olive oil. Add 1/4 teaspoon salt. Allow to cook until onions are softened and transparent, about 5 minutes.
- Add the zucchini, mushrooms, and herbs. Allow to cook for an additional 5 to 8 minutes, until the zucchini is softened, all the water released from the vegetables has evaporated, and mushrooms are browned. Add the minced garlic and remaining salt. Cook for 30 seconds longer. Remove from heat.
- Add the melting cheese, followed by the Parmesan cheese.
- Top with the panko breadcrumbs. Drizzle with remaining olive oil and sprinkle with pepper.
- Turn on the broiler. Place the pan under the broiler for 5 to 8 minutes or until the top cheese is golden.
- Remove and sprinkle with the parsley before serving, if using. Enjoy!
