Start by preheating the oven to 425 degrees F. Make sure to line a large baking sheet with parchment paper, then toss the veggies with olive oil, salt, and pepper. Next, spread them on the lined baking sheet and bake for 20-35 minutes, turning halfway through, or until browned and crispy. Let them cool for about 5 minutes and serve!

  • 2 parsnips large, cut into french fry shaped pieces
  • 1 beetroot large, cut into french fry shaped pieces

  • 1/2 teaspoon sea salt
