When I was younger, my family loved going to watch the local baseball games on Saturday afternoons. Quite frankly, I wasn’t a fan of the actual game at all, but a fan of the snacks we could get there! As a kid, there’s nothing more appealing than hot dogs, cotton candy, and of course, caramel popcorn! Indulging in these foods as a child is fine, but as we get older and our metabolism slows down, we’re forced to become a bit more choosey. That’s where our delicious, caramel pumpkin spice popcorn comes in!
Classic Flavors with a Healthy, Fall Twist
Prepackaged snacks and classic recipes for caramel popcorn are made using all kinds of refined sugars, processed ingredients, and more. When made the Skinny Ms way though, this tasty treat doesn’t have to be a diet disaster. One sweet serving is just over 200 calories, making it a totally manageable indulgence!
Our version is made with absolutely no refined sugars or artificial sweeteners, and there is nothing processed about it. Instead, we use a mixture of coconut sugar, coconut oil, pure maple syrup, pure vanilla, sea salt, and a dash of pumpkin spice to turn this deliciously indulgent treat into the perfect snack to celebrate the flavors of Fall. Adults will love it, and the kiddos will too!
A Holiday Treat that Makes a Great Gift!
Mix up a batch of our Caramel Pumpkin Spice Popcorn and fill pre-portioned containers for a healthier popcorn snack to take on-the-go. This caramel pumpkin spice popcorn makes an excellent gift for friends, family, teachers, or co-workers also. Nothing says, “happy holidays” or “thank you,” better than a sweet, homemade treat that was made with love.
Caramel Pumpkin Spice Popcorn
Ingredients
- 12 cups popcorn (2/3 cup kernels makes about 12 cups popcorn)
- 1/2 cup coconut oil
- 1 cup coconut sugar
- 1/2 cup pure maple syrup
- 1/2 teaspoon kosher or sea salt
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon baking soda
- 1 teaspoon pure vanilla
Instructions
- Preheat oven to 225 degrees.
- Add popped corn to a large mixing bowl.
- In a medium saucepan, combine coconut oil, coconut sugar, maple syrup, and salt. Stir over medium-low heat until coconut sugar is completely dissolved. Remove from heat and stir in pumpkin pie spice, baking soda, and vanilla. Pour over cooked popcorn and toss to coat.
- Spread coated popcorn on a parchment lined large baking sheet. Bake for 1 hour, stiring every 15 minutes. Remove from oven and allow to cool completely before serving.
- OPTIONAL: Add 1 cup mixed nuts to popcorn before adding warm maple syrup mixture.
