What is Caprese?

Caprese refers to the Italian dish traditionally made up of tomato, basil, and mozzarella. It is a tribute to the nation’s tricolor flag (red, white, and green) and is named after the Italian island of Capri. The traditional ingredients of caprese can be served in the form of antipasto, pizza, pasta, or sandwiches.

Our caprese salad has high protein ingredients including lean chicken and part-skim mozzarella. Together, these ingredients help bring this dish to a whopping 27 grams per serving! These protein sources are also low in saturated fat, which means that they don’t cause the same negative effects that high fat protein sources (such as red meat and dark poultry meat) could. Chicken Caprese Salad

Ingredients

  • 1 pound chicken breast grilled or baked, sliced, chilled
  • 1/2 cup mozzarella balls mini
  • 1 cup cherry tomatoes halved
  • 2 tablespoons basil leaves fresh
  • 4 cups arugula

Basil Balsamic Vinaigrette

  • 3 tablespoons olive oil extra virgin
  • 2 tablespoons balsamic vinegar
  • 1/2 teaspoon honey
  • 1 tablespoon basil chopped
  • 1 garlic clove minced

Instructions

  • Whisk together dressing ingredients.
  • Arrange the chicken, mozzarella balls, cherry tomatoes, and basil over a bed of arugula in 4 separate bowls.
  • Drizzle balsamic dressing over top and enjoy!
