Mornings can be hectic. And when we’re busy, we need easy breakfast ideas. This is why so many people end up choosing fast food. While your local fast food joint may make breakfast time easier, the damage it can do to your waistline may not be worth it. Our homemade sausage, egg, and cheese biscuits can be made ahead of time and reheated all week long for an easy and more nutritious breakfast!

Making these tasty breakfast sandwiches begins with the biscuits! We highly recommend using a homemade recipe for two main reasons. One, homemade always tastes better and two, you can control exactly what’s going into them! We used our quick and easy drop biscuits recipe. They only require six ingredients and take just fifteen minutes to make! Of course if you’re running short on time, feel free to use your favorite healthy premade option or swap the biscuits out for an English muffin or whole grain bread.

Next up is the sausage! Again, we’re going to recommend making your own (for the same two reasons mentioned above.) Not only does our skinny breakfast sausage taste delicious, but it’s also healthier than many store bought options. But again, if you don’t have the 20 minutes it takes to make this yummy turkey sausage, you can use premade! Try to choose a low-sodium turkey sausage to save yourself some fat and calories.

Assembling Your Homemade Sausage, Egg, and Cheese Biscuits

Make this tasty breakfast any day of the week!

Once you have your biscuits and sausage ready to go, it’s time to whip up your eggs! Grab a small mixing bowl and whisk your four eggs until the yolks and whites are combined. Heat some butter up in a skillet over medium heat, then, pour the eggs into the pan and let them sit for a few seconds. Stir the eggs, starting from the outer edges of the pan, working your way inwards. Continue this process until the eggs are cooked to your liking and then remove the pan from the heat. 

Split the biscuits open and place a sausage in each one. While the eggs are still hot, season with salt and pepper and then divide them up onto each piece of sausage. Immediately place your cheese over the eggs. Place the top back on the biscuit to keep the heat in and allow the cheese to melt a bit. 

How to Freeze and Reheat Your Breakfast Sandwiches

These tasty little biscuits are a family-friendly breakfast.

This well-rounded recipe serves four people, but if you’re only cooking for yourself, you’ll be happy to know that these keep extremely well when stored properly. And even if you’re cooking for multiple people, but want breakfast for a few days, feel free to double or triple the batch. Once you’re finished assembling your sandwiches, let them cool before wrapping them individually in plastic wrap. Then, place them in an airtight Ziploc bag and store them in the freezer. When you’re ready to eat one, take it out of the bag and remove the plastic wrap. Wrap each sandwich in a paper towel and microwave for 60 to 90 seconds, or until thawed completely.

  • Prepare the biscuits and sausage according to the instructions.
  • To make the eggs: heat the butter in a skillet over medium heat. Crack the eggs into a bowl and whisk them until combined. Pour the eggs into the pan and let them sit for few seconds. Then stir the eggs, starting from the outer edges of the pan, working your way inwards. Continue this process until the eggs are almost done cooking, then remove the pan from the heat.
  • Split the biscuits open and layer them with sausage, eggs and cheese. These are best served immediately.
