Ingredients

  • 6 ounces tuna can or jar, packed in spring water; recommend Safe Catch Tuna
  • 1/2 cup artichoke hearts diced
  • 1/2 cup kalamata olives pitted, chopped
  • 1 roasted red pepper chopped
  • 1/4 cup parsley fresh, chopped
  • 2 tablespoons basil leaves slivered
  • 3 tablespoons olive oil
  • 1 lemon juiced
  • salt to taste
  • pepper freshly ground, to taste

Instructions

  • Combine all of the ingredients in a bowl and season with salt and pepper. Chill until ready to serve.
  • Serve in lettuce leaves, on a baguette, or on whole-grain crackers.

    I Made this several months ago and have been eating it ever since. I started growing my own basil, so I could have it on hand all the time. It is so yummy!
