Skillet Chicken and Veggies
Ingredients
- 2 boneless and skinless chicken breasts cut into bite-size pieces
- 2 tablespoons extra virgin olive oil
- 1 onion coarsely chopped
- 1 red potato medium, peeled and diced
- 1 carrot large, peeled and thinly sliced
- 1 garlic clove minced
- 1 tablespoon balsamic vinegar
- 1/4 cup basil freshly chopped
- 1 tablespoon thyme leaves fresh
- 1/2 teaspoon kosher or sea salt
- 1/4 teaspoon black pepper
- 2 tablespoons Italian parsley chopped, for garnish
Instructions
- In a large saucepan add olive oil, over medium heat sauté chicken pieces until lightly golden. Add onion, potatoes and, carrots and continue cooking until tender and chicken is cooked through.
- Add garlic, vinegar, herbs, salt, and pepper, and sauté for 1 additional minute.
- Sprinkle on parsley before serving.
