  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 tablespoons extra virgin olive oil
  • 2 1/2 cups chicken broth

  2. Transfer the contents of the saucepan to the slow cooker. Add a little bit more extra virgin olive oil in the saucepan then sautè the onions over low - medium heat for about 5 minutes. Transfer the onions to the slow cooker. Add the squash, remaining chicken broth, and sage in the slow cooker. Set on low for 4 hours.

What type of squash do you recommend for this soup?

    • Gale Compton  October 4, 2017

Amy, I recommend whatever squash is in season. Try a fall squash, which is always yummy. Maybe butternut?

  2. Misty  October 16, 2017

Is the vegetable broth a typo? It is listed in the ingredients but not in the recipe directions.

    • Gale Compton  October 16, 2017

Misty, Typo, it’s only the chicken broth. It’s been removed. 🙂

Can this be prepared in advance?

    • Gale Compton  November 15, 2017

Christine, It can but would recommend adding the chicken just before cooking time. 🙂
