This Strawberry and Avocado Salad is topped with bright,  beautiful and succulently  sweet strawberries and blackberries. Add the Strawberry Balsamic Dressing and you have a simply delightful Springtime salad.

Strawberry and Avocado Salad with Strawberry Balsamic Dressing

This salad is bright and refreshing, the perfect light meal for the spring or summer.

Ingredients

Dressing

  • 1/2 cup strawberries roughly cut
  • 1 tablespoon balsamic vinegar
  • 1 dash stevia optional

Salad

  • 4 cups baby spinach leaves fresh
  • 4 cups arugula
  • 1/2 cup strawberries sliced
  • 1/3 cup avocado sliced
  • 1/3 cup blueberries or blackberries
  • 1/2 ounce goat cheese

Instructions

  • In a food processor or blender, add all of your dressing ingredients. Process until well blended. If dressing is chunky, place a sieve over a small bowl and pour dressing into the sieve. With a back of a spoon, push the strawberries through. Be sure to scrape the strawberry drippings from the backside of the sieve. Set aside.
  • In a bowl add all of you salad ingredients, toss with dressing and divide between two plates.

  1. Sounds delicious, but I would never scrap any part of a yummy strawberry. I would, however, scrape it off and eat it! 🙂 Any other time a typo wouldn't be a problem, but that one little letter "e" made all the difference!

  2. Are you using the caramel colored balsamic? That is all I have on hand. My husband bought it while I was recuperating from an auto accident.

    1. Marileen, We prefer not to use balsamic with caramel color but it will work in a pinch. 🙂
