Ingredients
- 12 Medjool Dates pitted
- 1 large sweet potato baked and peeled
- 1/4 cup almond butter
- 1/2 cup oat flour optional almond flour
- 1 teaspoon vanilla
- 2/3 cup vegan chocolate chips
- 3 tablespoons cocoa powder
Instructions
- Preheat oven to 350 degrees.
- Line small baking pan (1 1/2 - 2 quart) with parchment paper.
- Add dates to a food processor. Mince dates and pulse until a ball forms.
- Add remaining ingredients, including chocolate chips, and pluse until combined.
- Spoon into baking dish and bake 25-30 minutes.
- Cool completely before serving.
