Day 1

Lunch: Farro Salad with Apples and Walnuts
Dinner: Healthy Tex-Mex Lasagna (Be sure to save enough for tomorrow’s lunch!)
Snack/Dessert: Slow Cooker Cinnamon Honey Nuts 

Honey-Dijon Glazed Salmon with a Hint of Lemon

Day 2
Breakfast: Cinnamon Spiced Coffee  served with  Skinny Strawberry Yogurt
Lunch: Healthy Tex-Mex Lasagna (Left over from last night’s dinner)
Dinner: Honey Dijon Glazed Salmon with a Hint of Lemon
Snack/Dessert: A handful of frozen grapes

Day 3
Breakfast: Wake Me Up, Keep Me Going Smoothie
Lunch: Citrus and Spinach Salad with Creamy Lemon Dressing
Dinner: Slow Cooker Lentil Veggie Stew (Be sure to save enough for tomorrow’s lunch!)
Snack/Dessert: Left over Slow Cooker Cinnamon Honey Nuts

Whole-Grain Banana Blueberry Pancakes

Day 4
Breakfast: Whole-Grain Banana Blueberry Pancakes  
Lunch: Slow Cooker Lentil Veggie Stew (Left over from last night’s dinner)
Dinner: Spicy Eggplant Chili (Be sure to save enough for tomorrow’s lunch!)
Snack/Dessert: Skinny Ms. Chewy Oatmeal Cookies 

Baked Apple Chips

 Day 5
Breakfast: Pomegranate Banana Ginger Blast
Lunch: Spicy Eggplant Chili (Left over from last night’s dinner)
Dinner: Slow Cooker Polynesian Chicken
Snack/Dessert: Baked Apple Chips with a sprinkle of cinnamon

  1. Hi. I do not like seafood and most dressings besides ranch and occasionally italian. I can eat thousand island and also trench occasionally. I hate anything that tastes like vinegar.. Can I use a low fat/calorie ranch or other dressing? Can I sub some of the recipes and eat the same thing several times during the week. I live my myself, so making all of the recipes would waste a lot of food.
