Our chicken and summer squash bake is loaded with yummy flavor and crafted using highly-nutritious ingredients.

The summer season is for relaxing. While you may have a little more free time on your hands this time of year, it shouldn’t be spent in the kitchen! Our chicken and summer squash bake is a simple summertime dinner that requires just 10 minutes of prep time. And because it’s a one-pan meal, it greatly reduces clean up time as well. 

Simply stick this nutritious meal in the oven and get back outside to enjoy the nice weather. When it’s finished, this is a great meal to serve out back on the patio or deck. The bright colors and summer flavors are the perfect complement a warm evening!

When We Say “Well-Rounded Meal” This is What We Mean

If you’ve tried some of our other recipes, you have likely seen us use the term “well-rounded meal.” When we use this phrase, we’re referring to a meal that provides a healthy ratio of protein, carbohydrates, fiber, and “good” fats. This chicken and summer squash bake is, in fact, a well-rounded meal!

Boneless, skinless chicken breasts are one of our favorite sources of lean protein. Protein is vital for controlling your appetite, losing fat, and maintaining or building muscle. This particular dish offers 32 grams of protein in just one serving! 

Most of the carbohydrates in this recipe come from the potatoes, and they’re beneficial complex carbohydrates. Potatoes are widely viewed as unhealthy, but that’s just not true! When cooked in a healthy way (like baking), potatoes are an extremely nutritious food. They’re also an excellent source of vitamin C and offer more potassium than a banana! These two things aid in tissue repair and muscle function.

Olive oil and pine nuts largely contribute to the fat content of this summer dish. These healthy, unsaturated fats will provide you with energy, lower cholesterol levels, and support a healthy heart. 

Crazy Easy Chicken and Summer Squash Bake

One-pan meals make clean-up easier than ever, and they’re also super simple to make. This recipe is no different!

Begin by preheating the oven to 400 degrees Fahrenheit while you clean and chop your veggies. Toss the vegetables and chicken breasts in the olive oil and seasonings. Then, spread them out on a baking sheet in an even layer. Slide the pan into the oven and bake for 45 minutes. When there are five minutes remaining, sprinkle the pine nuts over the chicken and veggies to give them a toasted flavor.

You can serve this recipe straight from the pan. If you want create a beautiful visual before serving, place the ingredients on a serving platter before bringing it to the table.

Ingredients

  • 1 lb chicken breasts boneless, skinless (about 4 medium breasts)
  • 2 cups summer squash cut into 1" pieces
  • 2 cups cherry tomatoes halved
  • 1 red onion cut into 1" pieces
  • 2 lbs new potatoes quartered
  • 2 tablespoons olive oil
  • 2 tablespoons Herbs de Provence
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon ground black pepper
  • 1/4 cup pine nuts

Instructions

  • Preheat oven to 400°F
  • Toss chicken, squash, cherry tomatoes, red onion, and new potatoes in olive oil and seasoning
  • Spread on a baking sheet and for about 45 minutes
  • When there are 5 minutes left, add pine nuts to toast
