It’s the flavor that signifies the start of fall… Of course, we’re referring to pumpkin spice! Experience a sweetly spiced taste of autumn with these adorable little pumpkin spice tarts. Perfect for a fall gathering, these wonderful mini desserts offer lots of pumpkin-flavored goodness while remaining friendly to your health goals! Plus, they’re a great alternative to the usual pumpkin spice latte if you’d like to switch things up!
The Perfect Mini Treat
These beautiful little tarts are so cute and perfectly individualized. Sometimes all you need is a little taste of sweetness to satisfy your cravings. These perfectly-portioned treats will do just that, without making you feel stuffed or uncomfortable. This recipe is one my favorites to serve on Thanksgiving, but I love having them on hand throughout the season, just as an after dinner treat for my family.
These tiny tarts can even be frozen and saved for a later date. All you’ll need to do is pop them in the oven for about 5-10 minutes on 300 degrees Fahrenheit whenever you’re ready to enjoy them. Noted below, but you’ll also want to wait to top them if you’re freezing!
Healthy Swaps
We’ve made a couple of healthier swaps for this recipe in order to make it more nutritious! First, we swapped in coconut cream for heavy cream to slash unhealthy fats and calories. Next, we reduced the amount of brown sugar required by using more maple syrup. While this swap does not lessen the amount of sugar, maple syrup does offer some health benefits that the brown sugar does not. The coconut cream and maple syrup in this recipe offer nutrients including healthy unsaturated fats, antioxidants, and B-vitamins, all great for your immune function, hair, skin, nails, and even heart health.
Powerful Pumpkin
We love all things pumpkin in the fall, and these cute little tarts are no exception. Not only is pumpkin just so delicious, but it is also incredibly healthy because it is filled with nutrients like essential vitamins, minerals, and antioxidants. Things like beneficial vitamins A, C, and E (all antioxidants!) as well as fiber, potassium, and iron make up this bright orange squash. The nutrients in pumpkin have been shown to support eye and skin health, cardiovascular function, and immunity.
Prep these Perfect Pumpkin Spice Tarts
Preheat the oven to 350 degrees Fahrenheit. Meanwhile, whisk together the pumpkin puree and eggs in a bowl. Then, add maple syrup, vanilla extract, brown sugar, pumpkin spice, and salt, and mix well. Last, add the coconut cream and gently combine. Once mixed, fill each mini tart with the pumpkin filling. Bake the tarts for 15-20 minutes or until the filling is set and the center is slightly jiggly. Top each tart with a dollop of whipped cream and a sprinkle of pumpkin pie spice.
Keep in mind, if you are making these tarts ahead of time, wait until you’re serving to add the whipped cream and sprinkle of spices to keep them looking fresh and perfect. On another note, use a vegan tart and coconut whipped cream to make this a fully vegan recipe. Enjoy!
Pumpkin Spice Tarts
Ingredients
- 15 ounces pumpkin puree
- 2 eggs
- 3 tablespoons maple syrup
- 1/4 teaspoon vanilla extract
- 1/4 cup light brown sugar
- 2 teaspoons pumpkin pie spice
- 1/2 teaspoon sea salt
- 1/2 cup light coconut cream
- 12 mini tartlet cups
Topping
- whipped cream 1 small dollop per tart
- pumpkin pie spice
Instructions
- Preheat oven to 350 degrees
- Whisk together pumpkin puree and eggs in a bowl
- Add maple syrup, vanilla extract, brown sugar, pumpkin spice, and salt and mix well
- Add the coconut cream and gently combine
- Fill each mini tart with filling.
- Bake for 20 minutes or until filling is set and the center is slightly jiggly.
- Top with a dollop of whipped cream and a sprinkle of pumpkin pie spice
