- 4 large red potatoes, cut into 1-inch cubes
- 1 large sweet onion, diced
- 1/4 cup extra-virgin olive oil
- 1/2 teaspoon black pepper
- 1/2 teaspoon kosher or sea salt, more or less to taste
- 2 tablespoons fresh thyme
- Add all ingredients to slow cooker. Toss to combine.
- Cover and cook on high 3-4 hours or low 5-6 hours, or until potatoes are tender.
- Serve and enjoy!
