These potatoes are easy to make, taste delicious, and will become a family favorite in no time.

Ingredients

  • 4 red potatoes large, cut into 1-inch cubes
  • 1 sweet onion large, diced
  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon kosher or sea salt more or less to taste
  • 2 tablespoons fresh thyme

Instructions

  • Add all ingredients to the slow cooker. Toss to combine.
  • Cover and cook on high 3-4 hours or low 5-6 hours, or until potatoes are tender.
  • Serve and enjoy!
