Crock Pot Baked Sweet Potatoes

This healthy sweet potato recipe combines two of our favorite things. We love sweet potatoes for their sweet, creamy flavor and superfood qualities, and we are absolutely devoted to our slow cookers, as they make life easier and give food a tender, scrumptious texture that can be hard to achieve using other methods of cooking.

What makes sweet potatoes such a potent superfood? These root vegetables are loaded with vitamin A, which is essential to healthy vision, and is a key player in boosting the immune system. They also contain carotenoids, which contribute to the orange pigment of the sweet potato, and are rich in antioxidants, which have anti-inflammatory properties. Sweet potatoes also pack a whopping dose of fiber. Unlike regular white potatoes, they are rich in nutrients and are a healthier and more complex carbohydrate.

While we enjoy our sweet potatoes prepared in a variety of ways, we are very partial to this incredibly easy sweet potato recipe that calls for the use of the slow cooker. Slow cookers allow you to add your ingredients, set your timer, and go about your day. As they cook, over the course of many hours on low heat, your food will take on a tender texture that can only be achieved through slow cooking. These sweet potatoes will come out of the slow cooker tender to the fork, with the flesh coming apart easily and melting in your mouth.

Yields: 6 servings | Serving Size: 1/2 sweet potato | Calories: 142 | Total Fat: 0 g | Saturated Fat: 0 g | Trans Fat: 0 g | Cholesterol: 0 mg | Sodium: 11 mg | Carbohydrates: 32 g | Dietary Fiber: 4 g | Sugars: 1 g | Protein: 4 g | SmartPoints (Freestyle): 4


  • 3 large sweet potatoes, scrubbed
  • 2 teaspoons olive oil


  1. Rub oil on the sweet potatoes then wrap each potato in foil and place in the crock pot. Cover and cook on low 5 - 7 hours or until tender.
  2. Remove sweet potatoes from the crock pot, carefully remove foil, and slice down the middle lengthwise.

      Yes, you can cook on high for about 2 1/2 to 3 1/2 hours.

    You did not mention anything about adding water to the crock pot sweet potatoes, do you add water?

      Katie, You can, but it’s less messy and works better with foil because the heat isn’t escaping from inside the potato. 🙂

    I do this without using the oil. Just clean the potatoes, wrap them and out them in the slow cooker. They come out great! I always cook a few extra to take for lunch at work during the week.

      Dried fruit, honey, and maple syrup are all delicious options! You can also try more savory toppings such as plain Greek yogurt or ginger.
